I know am one of those that collapses too low when I shouldn't.
One of the advantages of being on the coaching staff for 10 year olds (I'm the trainer), is that you get to see the basics taught - and the breakout is one of those things we're covering with the kids. My son's coach is an ex-67s - so he is likely to know his stuff.
I want to keep it simple and based on this, the position I will endeavour to get to when we get control behind the net is somewhere around the boards, between the hash marks on the face-off circle and the blue line, with my butt towards the boards so that I can see if the centre is breaking. That way if that is avenue open, we can breakout with speed, otherwise, I'll look at my options along the boards - either breaking out myself with my masterful puck handling skills ;-) or sending the puck up the outside along the boards.
